- ½ cup honey
- ½ teaspoon of vanilla extract
- 1/8 teaspoon of salt
- ½ cup cold water
- 1 ½ tablespoons of gelatin
First, grease a loaf pan a bit. Next, put a parchment paper in it and grease once again. After that, pour ¼ cup of water in a bowl and add the gelatin. Let it soften.
Add another ¼ cup of water, the salt and honey in a different pot and put it on the stove at medium heat. Your mixture should have exactly 240 degrees, and it can be measured by using a sweet thermometer.
It can also be checked by sipping a small amount of the liquid in a bowl that you have previously filled with cold water. When you are doing that it should stay in a candy stage and create a little soft ball. You will reach that level of temperature 7-8 minutes later.
Next, after reaching the right temperature, just take the pot away from the heat.
After that, by using a hand mixer mix the previously obtained gelatin mixture and this hot mixture together. The hot mixture is supposed to pour down the bowl’s side.
After you finish with all of the things mentioned before, add the vanilla, and begin to beat for 12 – 15 minutes on high speed until you obtain a thick mix. In the end, scrape it into the prepared pan, but don’t cover it, and store it for around 4 – 12 hours, or during the night in order for it to dry. With cocoa: After you prepare them, roll them in some cocoa powder.
With coconut: Start by toasting ½ a cup of unsweetened coconut flakes, and put half of them on the pan’s bottom. After that, add the marshmallow mixture, and then add on top more coconut flakes.
